In general, the restaurant industry provides you with very little training or teaching of the actual skills needed to succeed. It's sink or swim as you figure it out on your own. This often results in inexperienced people getting let go after a month. Management’s reasoning is often: “You weren't fast enough” or “you just weren't getting it.” It's discouraging because you weren't given the proper training to avoid these pitfalls!

ABOUT ME AND WHY I STARTED THE COURSE

 Serving changed my life! I want it to do the same for you. 

MY STORY

 After graduating from Algonquin College's business management program, I began my journey as a server. Like most people with no experience, I started as a general helper in the restaurant industry. Wearing many hats, I did everything from cleaning to bartending, seating people, and even washing dishes, all while persevering, knowing that it would all be worth it when I became a server and started earning tips. 

 

I've worked at every type of restaurant, honing my skills, both in casual and fine dining.

 

 Currently, I'm managing and serving dinner at one of Ottawa's hottest restaurants in the Byward Market, Ratatouille Bistro.

MY INSPIRATION 

 Something I noticed across all the restaurants I've worked at was that they don't teach you how to be a server, only what to do in the restaurant. Management and senior servers would regularly complain about new servers being “green” or “too slow”. This usually ended with the new server being let go. I felt like this wasn't fair, considering no one trained them on any of the basics. 

​

 While managing Ratatouille Bistro, I've hired and trained many new staff, but what surprised me was how experienced servers still do not know the basics.

 

 The serving industry is “learn as you go” with no formal training. I saw servers with 10 years of experience make obvious mistakes. Ten years of experience, but unfortunately, 10 years of learned mistakes. Serving their way, not the right way. 

And with that, the idea of creating this course was born. To teach people the basics of serving and what is expected of them as servers in the restaurant industry. Giving new staff the right skills to develop from the start and to be a valuable employee.
